It’s nice ⁣to put a ‌little more care ‌and‍ attention into individual cakes and these tropical cakes certainly showcase⁤ additional patience​ and skill. I’ve baked the ginger cakes inside individual mould tins with removable bases – quite clever and time-saving! The ​cakes form a natural crust on the top so turn them upside down to decorate – using fresh lime buttercream and effective golden pineapple sunflowers.

There’s something quintessentially ⁢charming about meringue – from the classic ​Eton mess of fresh ‍strawberries, whipped cream and crushed meringue to the impressive⁢ pavlova ⁣piled high with cream and summer berries. Once you have mastered‌ making a pavlova – you can experiment with‍ the fillings. I have chosen ⁢a modern interpretation of the⁤ classic combination of rhubarb and custard ⁢for these‌ mini pavlovas.

• My son‍ described this as ‘a Ferrari ​in a cake’ and who can argue with that? ⁢This red mirror ⁤glaze ​is made‌ with white chocolate and glucose syrup to create‍ a super-shiny, vibrant red, glossy ‌mirror ‌glaze. This technique can be used ⁣with other‍ colours to personalise your cakes. The secret is to⁣ have all the colours at‍ the right temperature and⁢ the cake ‌pre-frozen so the ⁢icing sets quickly as it is poured.

CHOCOLATE CAKE WITH ‌HAND-MOULDED ROSES 🌹

• For a ‌more extravagant or special celebration or to expand ⁤your hand finishing skills, use the ⁤template on page 217, scribed onto the cake and ​hand piped in⁤ a soft golden caramel colour. Make roses from the same chocolate fondant ⁤and⁣ hand pipe royal iced leaves. These can be ⁤sprayed with bronze lustre before‌ dressing the⁤ cake.

• I ⁢first saw these Nifty‌ Nozzles ‍at ⁢Cake International,‍ a ‍cake decorators’ emporium and competition showcase. They ‌are extremely effective for decorating cakes – although it takes a little practice to master the technique. The​ delicate mango cupcakes are complemented by ⁤a‍ super zingy passion fruit curd⁤ and decorated with silky-sweet vanilla flavoured, coloured buttercream.
